BLT Pasta Salad

BLT Patsa Salad: Savory Sweet and Satisfying

This salad has all the goodness of a BLT, except in place of bread there is pasta. Initially this salad is served room temperature, but if there are any leftovers they need to be refrigerated, and I think the cold leftovers taste just as good as it tasted freshly made. Making it a delicious salad perfect for the summer months.

BLT Pasta Salad

Ingredients:

  • 12 ounces rotini pasta
  • 1/2 cup milk
  • 1/3 cup light mayonnaise
  • 1/3 cup greek yogurt
  • 1/3 cup light sour cream
  • 12 ounces turkey bacon, cooked and crumbled
  • 5 Roma tomatoes, cut into bite sized pieces
  • 4 tablespoons green onions
  • 5 cups chopped romaine lettuce

Directions:

  1. Cook pasta according to directions. Drain and rinse with cold water.
  2. Add drained pasta to a large bowl and mix in milk.
  3. In a small bowl combine the mayonnaise, yogurt, and sour cream. Add to pasta and mix well.
  4. Add the bacon and tomatoes to the pasta and mix. Add in the the green onions and lettuce and mix.
