Country Turkey Casserole: Savory Sweet and Satisfying

I have been enjoying using my leftover Thanksgiving turkey I defrosted this week in casseroles. Here is another delicious, yet easy casserole that uses turkey. Plus it has vegetables in it.

Country Turkey Casserole: Savory Sweet and Satisfying

Country Turkey Casserole

Ingredients

  • 10 3/4 ounce can cream of celery soup
  • 10 3/4 ounce can cream of potato soup
  • 1 cup milk
  • 1/4 teaspoon dried thyme leaves
  • 1/8 teaspoon black pepper
  • 2 cups frozen green beans
  • 2 cups frozen carrots
  • 2 cups cooked turkey
  • 1 1/4 cups boiling water
  • 4 tablespoons unsalted butter, melted
  • 4 cups seasoned stuffing cubes

Directions:

  1. Preheat oven to 400ยบ F.
  2. In a large bowl combine both soups, milk, thyme, pepper, vegetables and turkey. Spoon into a 3 quart shallow baking dish.
  3. In another large bowl combine water, butter and stuffing. Spoon over turkey and vegetable mixture.
  4. Bake for 25 minutes or until hot.
