This recipe is so very easy which makes it perfect for the crazy holiday season. I really do not think it could get any easier. Mix the ingredients pour over pork in the crock pot. Cook and end up with delicious fall apart meat and a tasty sauce that is just right with minimal effort. Just remember that every crock pot cooks differently, so you may want to check the meat a few times to make sure you do not over cook it or it will be dry.
Crock Pot Cranberry Pork Loin
Ingredients:
- 3 pounds pork loin
- 14 ounce can jelled cranberry sauce
- 1/2 cup 100% cranberry juice
- 1/2 cup granulated sugar
- 1 teaspoon ground mustard
- 1/2 teaspoon ground cloves
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- Place pork loin in a slow cooker.
- In a medium bowl, mash cranberry sauce, then stir in cranberry juice, sugar, mustard and ground cloves.
- Pour over pork loin.
- Place lid on crock pot and cook for 5-8 hours.
- Remove pork loin from crock pot and place on a serving platter and cover with foil.
- In a small bowl combine cornstarch and water to make a paste.
- Remove out 2 cups of the liquid from the crock pot and pour into a saucepan. Bring to a boil over medium heat.
- Add in cornstarch mixture. Stir and cook until thickened.
- Serve sauce over pork.

Note:
You can make more sauce if you want. Just increase the cornstarch and water by a tablespoon each for every 1 cup of additional liquid.
