Cheesy Bacon Potato Rounds

Savory Sweet and Satisfying: Cheesy Bacon Potato Rounds


I have been in the mood for burgers a lot lately, but was looking for a different side than my normal Baked Oven Fries and Spicy Oven Fries. Not that those fries are not super good, but I just needed a change and these potatoes provided it.

Cheesy Bacon Potato Rounds

Ingredients:

  • 4 russet potatoes
  • 1/4 cup unsalted butter, melted
  • 8 slices turkey bacon, cooked and crumbled
  • 1 cup cheddar cheese, shredded
  • 1/2 cup green onions, chopped

Directions:

  1. Preheat oven to 400° F.
  2. Cut potatoes, with skins on, into 1/2 inch slices.
  3. Brush both sides of potato with melted butter, and place them on an un-greased baking sheet.
  4. Bake for 30-40 minutes, turning the potatoes halfway through the cooking time, until lightly browned on both sides.
  5. When potatoes are cooked, top them with bacon, cheese and green onions.
  6. Return to the oven and continue to cook until the cheese has melted.
