Creamy Mashed Potatoes

Creamy Mashed Potatoes: Savory Sweet and Satisfying

These are the perfect mashed potatoes to enjoy without gravy. Just like the name says, they are nice and creamy, thanks to the cream cheese and sour cream.

Creamy Mashed Potatoes

Ingredients:
  • 5 pounds russet potatoes, peeled and cubed
  • 8 ounces light sour cream
  • 6 ounces reduced fat cream cheese, softened
  • 3 tablespoons unsalted butter, divided
  • 1 teaspoon onion powder
  • 1/4 teaspoon black pepper
Directions:
  1. Place potatoes in a large pot and cover with water. Cover and cook for 20-25 minutes or until potatoes are very tender. Watch the pot and adjust heat as necessary so it does not boil over. Drain potatoes well.
  2. Preheat oven to 350°F.
  3. In a large mixing bowl mash the potatoes, then add sour cream, cream cheese, 2 tablespoons butter, onion powder and pepper.
  4. Using a hand mixer, mix well until light and fluffy.
  5. Transfer the potatoes to a greased 2 quart baking dish.
  6. Dot with remaining tablespoon of butter.
  7. Bake, uncovered, for 20-25 minutes or until heated through.
