Hummus Roasted Broccoli

I love experimenting with different ways to flavor roasted broccoli. Roasting broccoli is so easy and it gives the broccoli such a wonderful flavor, that you can not get by any other cooking methods.

This recipe could not be any easier to make. You roast the broccoli and then toss with your favorite hummus. I used my homemade chipotle hummus, but you could use any flavor you like either homemade or store bought.

Hummus Roasted Broccoli

Ingredients:

  • 3 1/2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • 1/2 cup hummus

Directions:

  1. Preheat oven to 425.
  2. Toss broccoli florets with olive oil and black pepper.
  3. Spread out on a cook sheet with sides and roast for about 10 minutes.
  4. Transfer broccoli to a bowl and toss with hummus. Do this as soon as you take the broccoli out of the oven, so the warm broccoli will heat up the hummus and make it easier to toss together.
