Cheesy Sour Cream Chicken: Savory Sweet and Satisfying

To be completely honest with you all, I did not have high hopes for this recipe. I figured it would be a decent recipe and taste alright, but would not make the cut to appear on my blog and be saved to make again. 

The reason I made this chicken was because I had some sour cream to use up and this recipe called for the exact amount I had, plus I had the exact amounts of cheeses needed. So it just made sense to make it.

I was totally and completely wrong about this recipe. The chicken was so delicious, flavorful and of course nice and cheesy. It was not dry as chicken can very easily become. I will definitely be making this chicken again anytime I have some leftover sour cream to use up.

Cheesy Sour Cream Chicken

Ingredients:

  • 4 boneless skinless chicken breasts
  • 1 cup sour cream
  • 3/4 cup shredded parmesan cheese, divided
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • black pepper, to taste
  • 4 ounces shredded mozzarella cheese

Directions:

  1. Preheat the oven to 375º F. Spray a baking dish, roughly the same size as all of your chicken breasts with cooking spray (see notes).
  2. In a medium bowl, add in the sour cream, 1/2 cup parmesan cheese, oregano, basil, garlic powder and black pepper, stirring to combine.
  3. Place the chicken breasts into the prepared baking dish and sprinkle the cheese evenly over top. Then gently and evenly spread the sour cream mixture over top of the chicken, followed by sprinkling the remaining parmesan cheese on top.
  4. Bake for 1 hour or until the chicken is completely cooked.

Notes:
I used my 9x13 inch baking dish that is not a true 9x13 inch baking dish, it is just a shade smaller than my other baking dishes of the same size. As you can see from the top picture the cheese (and sour cream) melted all over the baking dish. So when serving I had to scoop all of the cheese from around this dish to serve with the chicken. I would recommend when making this chicken to use a baking dish that is only slightly bigger than all of the chicken breasts., leaving only a little bit of room in between each chicken breast will prevent you from have cheese melt all over the baking dish.
