Jalapeño Popper Macaroni Salad: Savory Sweet and Satisfying

Any time I have ever had a macaroni salad, they are very similar. There was never anything special about them. But that is not the case with this macaroni salad. It is full of fresh jalapeños for a nice crunch and great spiciness. It also has yummy bacon and cubes of cheese. A delicious and spicy macaroni salad perfect for the warm summer months.

Jalapeño Popper Macaroni Salad
Ingredients:
1 pound elbow macaroni pasta
1 cup diced jalapeños
4 ounces cheddar cheese, cubed
10 slices bacon, cooked and crumbled
1 cup mayonnaise
1 cup sour cream
4 ounces cream cheese, room temperature
2 tablespoons lemon juice
1 teaspoon garlic powder
black pepper, to taste

Directions:
Cook the pasta according to the package directions. Drain and rinse with cold water until the pasta has cooled.

In a small bowl, whisk together the mayonnaise, sour cream, cream cheese, lemon juice, garlic powder and black pepper, until well combined and smooth.

In a large bowl, add the cooled pasta, jalapeños, cubed cheese and bacon. Pour the dressing over top and mix everything together.

Cover the bowl and refrigerate for at least 30 minutes.
