Chicken Teriyaki Casserole

Chicken Teriyaki Casserole: Savory Sweet and Satisfying

When it comes to cooking one of the things I really dislike is when a recipe requires you to brown the chicken or cooking it completely before adding other ingredients and then cooking it in the oven. With this recipe there is no precooking the chicken, it cooks in the oven with the sauce. Then you add the other ingredients and cook it some more.

Chicken Teriyaki Casserole: Savory Sweet and Satisfying

Chicken Teriyaki Casserole

Ingredients:
  • 1 cup low sodium soy sauce
  • 3/4 cup water
  • 1/2 cup brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon minced garlic
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 3 medium boneless skinless chicken breasts
  • 1 cup quinoa
  • 6 cups frozen stir fry vegetables
Directions:
  1. Preheat the oven to 350º F. Spray a 9x13 baking dish with cooking spray.
  2. In a small saucepan, stir together the soy sauce, water, brown sugar, ginger and garlic. Bring the mixture to a boil and then remove from the heat.
  3. Combine the cornstarch and 2 tablespoons water until well mixed. Add to the soy sauce mixture and stir until well mixed.
  4. Place the chicken into the prepared baking dish and top with the sauce. Bake for 30 minutes.
  5. While the chicken is baking cook the quinoa according to the package directions.
  6. Remove the baking dish from the oven and add the frozen stir fry vegetables and then the cooked quinoa. Smooth into an even layer and bake for 15-20 minutes or until the vegetables are thawed and cooked.
