Honey Lemon Chicken Broccoli Bowl: Savory Sweet and Satisfying

This recipe is pretty simple to make and comes together fairly quickly. Plus it tastes really good. A sweet sauce with a little bit of spiciness and lemon flavor.

Honey Lemon Chicken Broccoli Bowl

Ingredients:

  • 1 cup brown rice
  • 12 ounces broccoli florets
  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts, cut into 1 inch pieces
  • black pepper, to taste
  • 1/2 cup low sodium chicken broth
  • 1/4 cup pineapple juice
  • 1 lemon, juiced
  • 1/4 cup honey
  • 1 tablespoon reduced sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon ground ginger
  • 3 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 teaspoon Sriracha

Directions:

  1. In a medium saucepan cook the rice according to the package directions.
  2. Place the broccoli into a steamer or colander set over a pan of boiling water. Cover the pan and steam the broccoli until cooked through and bright green, about 4-5 minutes.
  3. Heat the olive oil in a large skillet over medium high heat. Season the chicken with black pepper and add to the skillet. Cook until the chicken is completely cooked and golden, about 3-5 minutes. Remove the chicken from the skillet and set aside.
  4. In the same skillet the chicken was cooked in, add in the chicken broth, pineapple juice, lemon juice, honey, soy sauce, vinegar, ginger, garlic, cornstarch and Sriracha. Bring the mixture to a boil, stirring constantly. Reduce the heat to a simmer and continue to stir constantly until the mixture has thickened slightly, about 3-5 minutes. Remove from the heat, add in the chicken and stir until well coated.
  5. Divide the rice evenly between 3 bowls and top with the broccoli and the chicken and sauce.
